The Church of St. Barbara in Šibenik is a Gothic single-nave gem dating back to around 1400, making it one of the older surviving religious structures in the area. It sits close to the famous Cathedral of St. James, so you can easily take both in together. Worth knowing: the church was deconsecrated in 1806, so its current role is more cultural than religious — it now functions as a museum of sacred art.
